Chicken or Beef Fajitas

  • Ingredients
  • Chicken Thighs/Beef Top Sirloin
  • 1 large Onion sliced
  • 3 Cloves of Garlic chopped
  • 1 Green and Red Pepper sliced
  • Chili Powder
  • Cumin Powder
  • Coarse Salt
  • Coarse Pepper
  • Shredded Monterey Jack/Cheddar Cheese
  • Corn Tortillas/Flour Tortillas
  • Chicken/Beef Broth
  • Canola Oil
  • Sour Cream
  • Chipotle Chinook Gourmet Sauce
Prep Time: 30 minutes.

Heat a skillet over medium-high heat with 2 tablespoons of canola oil. Cut the chicken thighs, or beef sirloin into ½ inch strips. Season meat with coarse salt, coarse pepper, chili powder, cumin powder, garlic and onion powder. Fry up the meat for 7-10 minutes, and place on a clean plate lightly covered with foil as to not overcook.

Meanwhile, over medium heat, add to the same skillet, onion, garlic, green and red pepper, and heat through for 8-10 minutes. Season with some salt and pepper. After 5 minutes, add ½ cup of chicken or beef broth and cook down. If you like your veggies crunchy skip the last step.

Add chicken back into the veggie mix and toss to coat veggies with the seasoning from the meat.

Next, warm up your corn tortillas, and once the tortillas are warmed to your liking, start building your fajitas. Start by adding a couple pieces of your meat, followed by a little onion and pepper mixture. If you like sour cream, add a drizzle over top and finally, drizzle of Spicy or Mild Chipotle Chinook Gourmet Sauce.

If you have left overs just reheat the next day and repeat. Try the fajita filling in a burrito wrap. Drizzle sour cream and Chipotle Chinook sauce and you have a 5 minute meal that rocks!

This is a healthy, fast and easy supper your whole family will enjoy. The Chipotle Chinook Gourmet Sauce you'll find really makes the dish come together.
