Coconut Milk Beef Curry Stew


  • Ingredients
  • 1 Can Coconut Milk
  • 1 lb Top Sirloin Beef
  • 1 Medium Onion
  • 1 Red Pepper
  • 2 Cups of Spinach
  • 1 Tablespoon Soy Sauce
  • 2 Tablespoon Toasted Sesame Oil (divided)
  • 5 Medium White Potatoes
  • 1 Small Head of Cauliflower
  • 1 Tablespoon of Curry
  • 1 Tablespoon of Cornstarch
  • Salt & Pepper
Prep Time: 45 minutes.

Sauté 1 thinly sliced onion and 1 julienned red pepper in 1 tbsp of toasted sesame oil. In a separate pan, brown seasoned sliced meat in the other tablespoon of sesame oil. Once the onion mixture has softened, add the browned meat and cook it together with a tbsp of curry and a tbsp of soy sauce for a few minutes. Meanwhile, mix a can of coconut milk with a tbsp of cornstarch, then add it to the meat & onion mixture. (Adjust curry and soy sauce amount for taste.) On medium low heat, add chopped cauliflower and potatoes then cover and cook for 20 minutes, or until the vegetables are soft. At the end add your spinach, and remove from heat.

This is a great time to dish up your stew into bowls and add a little of your favourite Chipotle Chinook Gourmet Sauce. A nice fusion of smoky heat without losing the curry experience!

Leftover ideas: Add a little of the stew with rice to a wrap and drizzle with Chipotle Chinook Gourmet Sauce. Very delicious.
