Fish Tacos

  • 2 Snapper Fillets
  • Fresh Onion
  • Flour
  • Chicken Broth
  • Panko or Gluten Free rice crispy cereal
  • Salt
  • Pepper
  • Paprika
  • Garlic Powder
  • Onion Powder
  • 1-2 eggs
  • Purple cabbage
  • Safflower Oil
  • Mayonnaise
  • Corn Tortillas
  • Chipotle Chinook Gourmet Sauce
Serves 4 adults

Prep Time: 30 minutes.

Before you start cooking it makes sense to be prepared with all the ingredients that need chopping. I like to fry up my onions next with some oil and butter, and season with salt, pepper and good quality Hungarian paprika. Cook onions through on a low temperature, using some chicken broth to cook them down.

Purchase your favourite light fish fillet. We like Red Snapper. Season the fillet with with salt, pepper, onion powder and garlic powder. I am liberal with my spices. Some people mix their spices into their flour, and then flour the fillets before placing them through an egg wash. Once the fillet has been seasoned and floured, pass the fillet through an egg wash. Have your favourite crusting ingredient, panko, or if you're gluten intolerant try gluten free rice crispy cereal, and have ready on a plate. Cover the wet fillet with your dry crust. Heat a fry pan with a generous amount oil, perhaps Safflower for its light flavour. Depending on the thickness of the fillet, we fry the fillet for 3 minutes per side. Both sides should be nice and browned, and the inside of the fillet should be juicy and cooked through. Keep a clean plate handy for your finished fillets.

While the fish sits on a plate, heat another fry pan. Heat up corn tortillas, which are our preference, until they are lightly browned and softened. This provides a bit of crunch. As well, chop up some purple cabbage for veggie content, colour, and more crunch. Cut the fish fillet into strips and place a strip on your tortilla, then add a little cabbage.

Chipotle Chinook Gourmet Sauce is a great addition here. Drizzle some over the top and take a big bite. Enjoy the blend of flavours. If you want to make it creamy, grab your favourite mayonnaise, we add 2 parts Chinook Chipotle Gourmet Sauce to one part mayonnaise. Drizzle over the fish taco and take another big bite.
