Ground Beef / Turkey Tacos


  • Ingredients
  • 1 lb. lean ground beef or turkey (We like ground turkey from L & D Meats Kelowna)
  • 1 medium onion
  • Sea salt
  • Cracked pepper
  • Chili powder
  • Cumin powder
  • Garlic powder
  • Paprika
  • Ketchup
  • Olive oil
  • Corn tortillas
  • Shredded lettuce
  • Chopped tomatoes
  • Sour cream
  • Jack cheese
  • Chipotle Chinook Gourmet Sauce
Prep Time: 30 minutes.

Using a large cast iron cook pan or non-stick pan, add 1 tbsp of oil and starting frying up your onion over medium low heat. Once your onion starts to become translucent, add your ground meat. Increase the heat to medium. Mix the meat with the onion allowing the meat to brown a bit and season with salt and pepper. Be careful not to burn your onions. Once the meat is cooked, add 1 Tbsp of chili powder, 1 tsp of cumin, ½ a tsp of paprika, ½ tsp of garlic powder and mix into meat mixture. This will add dryness to the mixture. This is a good time to taste your mixture for seasoning and salt balance. Once it's to your liking, add ¼ to ½ a cup of ketchup. This adds a slight sweetness to the mixture. Another twist would be to leave this part out, but I love it a little wet with the ketchup. These spices blend well with ketchup. If you need more liquids, you can add a little water but watch not to over hydrate. The mixture should appear slightly wet, but not soupy. You're done.

Now, warm up a couple corn tortillas, or burrito wraps. Melt a little cheese and add ¼ cup of the meat mixture to the tortilla while it warms. I like mine slightly crunchy, so once you're there, remove from heat and garnish with some diced tomato, shredded lettuce, a drizzle of sour cream and last but not least a nice drizzle of Chipotle Chinook Gourmet Sauce.
